HOW TO STORE YOUR COLORADO POTATOES

Store potatoes in a cool dark place with good circulation.
Do not refrigerate potatoes. The ideal storage temperature
is between
42ºF and 48ºF. Warmer temperatures encourage sprouting,
shriveling, and decay.
Temperatures below 42ºF turn starch in potatoes
into sugar, producing an uncharacteristic sweet flavor.
Avoid prolonged
exposure to light, as even small amount of exposure
can cause potatoes to turn green.
